Back To School Lunch Recipe: Lasagna Roll-Ups

Make your mornings easier with this quick, tasty back to school lunch recipe!

We know that getting the kids back to school is always crazy. Even if you were more prepared than you’ve ever been, school mornings put you and your kids on the clock and, inevitably, things go wrong.

So you don’t have to be stressed about packing lunches on top of tying shoes, packing backpacks, and making sure shirts aren’t inside out, here’s a quick and easy back to school lunch recipe for lasagna roll-ups.

With just 20 minutes and eight ingredients, you can whip up four servings of this perfect lunch.

  • Kosher salt
  • 8 lasagna noodles
  • Olive oil
  • 3 tablespoons of Parmesan
  • 1 ½ cups of ricotta
  • 5 chopped sun-dried tomatoes packed in oil
  • 1 cup of torn basil leaves
  • 24 slices of pepperoni
  • 1 cup of marinara sauce

Salt a large pot of water and bring it to a boil. Cook your noodles according to the package directions, drain them, and toss with a little bit of olive oil. Lay the noodles flat so that none are touching and let them cool.

In the meantime, stir together the Parmesan, ricotta, tomatoes, and a pinch of salt.

Divide the Parmesan mixture between the eight lasagna noodles, spreading it so it covers each noodle from end to end. Sprinkle with basil and lay 3 slices of pepperoni on each roll.

Roll tightly into a log and cut each in half. Pack four of these pieces with ¼ cup of marinara sauce for dipping, and make your kids happy as you keep yourself sane!
