Mango Guacamole Recipe For Your Summer

The warmer weather probably has some effect on your eating habits. You have stowed your crock pot away and are opting instead for fresh, seasonal produce and lighter choices. Fortunately, there are some quick, easy, and delicious recipes you can throw together to flavor your meals. Since we have no shortage of avocados in California, why not try this one?

Make your meals zesty this summer by whipping up this fresh and delicious mango guacamole recipe.

  • 3 medium avocados
  • Kosher salt
  • Freshly cracked black pepper
  • 2 large or 3 small limes, juiced
  • ¼ cup of minced fresh cilantro leaves
  • 2 tablespoons of minced red onion
  • 1 clove of garlic, grated
  • 1 peeled and diced mango
  • ½ small habanero pepper, diced*
  • ¼ of a red bell pepper, diced

Peel and pit your avocados. Put the flesh into a medium bowl. Mash the avocados until there are few chunks, then stir in the lime juice. Add salt and pepper to taste.

Gently mix in the cilantro, onions, garlic, mango, habanero, and red bell pepper. Taste the mixture and add more seasoning as necessary. If you want your recipe hotter, you can use a full habanero pepper and/or leave in the ribs and seeds, but we advise you taste as you go to avoid too-hot-to-eat salsa!  Serve with chips and enjoy!
