How to Make the Perfect Ice Cream Sandwich

Combining the warm sweetness of a cookie and a cold scoop of ice cream may be one of life’s simple pleasures.

Ice cream and cookies are pretty good on their own merit, and even cookies and cream ice cream tastes good. But nothing quite beats ice cream wedged between two delicious cookies. This ice cream sandwich is one that requires special strategy and planning. Sure you can just dump some ice cream onto any old cookies and then have the dessert that way, but where’s your integrity? Ingredients

  • Chocolate chip cookie dough
  • Vanilla, or chocolate chip ice cream

Directions

  1. Bake the Cookies. Baking the cookies first allows for the ice cream to stay in the freezer longer. It’s important to undercook them, so bake them for 14 minutes at 350 degrees F.
  2. Cool the cookies for 5 minutes or less. 3 to 4 minutes is ideal; they should be hot, but firm enough to handle.
  3. Take the ice cream out of the freezer. Your ice cream needs to be as cold as possible, so keeping it in the freezer until this moment assures the solidity and coldness.
  4. Shave the ice cream in strips, not lumps. When you’re scooping your ice cream, it’s important to shave strips off–not big round balls.
  5. Assemble the sandwich. Don’t spread the ice cream onto the cookie, just lay the strips and then press another cookie on top of it almost immediately.
  6. Eat the sandwich. Ice cream is melting, and the cookies are cooling down and hardening! Don’t delay!
  7. Repeat. Eh. Why not have another!
