Cinco de Mayo commemorates Mexico’s victory over French forces at the Battle of Puebla in 1862.  In the United States, Cinco de Mayo is popularly celebrated by preparing festive dishes inspired by the traditional flavors of Mexico.  Looking for a little inspiration this holiday?  Then try preparing this delicious Cinco de Mayo recipe for all your loved ones.

Cheesy Chicken Enchiladas

Ingredients:

  • 1 lb. rotisserie chicken, shredded
  • kosher salt
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 4.5-oz. can green chilis
  • 1 15-oz. can black beans, rinsed
  • 1 15-oz. jar red enchilada sauce, divided
  • 10 large flour tortillas
  • 3 cups shredded Monterey Jack cheese
  • ¼ cup freshly chopped cilantro
  • 2 limes, cut into wedges

Directions:

  • Preheat oven to 350°F. In a medium bowl, mix chicken, salt, cumin, chili powder, garlic powder, green chilis, black beans, and ½ cup enchilada sauce.
  • In a large skillet or casserole dish, pour ½ cup enchilada sauce over bottom. In the center of each tortilla, spoon a small scoop of chicken mixture and sprinkle with Monterey Jack cheese.  Roll up tortilla and place it seam side down onto enchilada sauce; repeat with remaining tortillas.  Pour remaining enchilada sauce over the tortilla rolls and sprinkle with remaining Monterey Jack cheese.  Bake until cheese is bubbling and melted, 15 minutes.
  • Serve with cilantro and lime.
