Easy Recipe for a Weeknight Dinner

Everyone will love this simple dinner recipe!

The middle of the week can be the most difficult time to make dinner. With busy schedules and the mid-week hump, you may find yourself searching your pantry to find something to throw together. Try this deliciously easy dinner recipe that your whole family is sure to enjoy.

Thai Beef with Basil

Ingredients:

  • 2 tablespoons vegetable oil, divided
  • 2 red chiles, thinly sliced and divided
  • 5 garlic cloves, thinly sliced
  • 1 pound ground beef
  • Kosher salt and freshly ground black pepper to taste
  • ½ cup low sodium chicken broth
  • 2 medium carrots, coarsely grated
  • 3 cups fresh basil leaves, divided
  • 2 thinly sliced scallions
  • 4 tablespoons fresh lime juice, divided
  • 2 tablespoons reduced sodium soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Steamed rice

Directions:

  1. Heat 2 tablespoons oil in a large skillet over high heat. Add 1 chile and garlic and cook, stirring constantly until fragrant, about 30 seconds. Add the beef, season with salt and pepper and cook, breaking up with a spoon until cooked through and crisped in spots, about 8 to 10 minutes. Add 2 cups basil and broth and cook, stirring until the basil is wilted, about 2 minutes.
  2. Toss the scallions, carrots, 1 tablespoons lime juice, remaining chile, 1 tablespoon oil, and 1 cup basil leaves in a small bowl.
  3. Mix the fish sauce, sugar, soy sauce, and rest of the lime juice in another small bowl and mix until the sugar is dissolved.
  4. Top the rice with beef and slaw and drizzle with the soy dressing. Enjoy!
