Tomatoes

Tomatoes are a fantastic source of the antioxidant lycopene.  Studies have linked diets rich in lycopene with a decreased risk for bladder, lung, prostate, skin, and stomach cancers.  Additionally, lycopene can reduce your risk for coronary and artery disease.

Carrots

Most red, yellow, or range colored vegetables contain carotenoids, fat-soluble compounds associated with reducing your chances of developing a wide range of cancers.  Additionally, consuming vegetables rich in carotenoids can reduce the risk and severity of inflammatory conditions such as asthma and rheumatoid arthritis.
